2007 Hog & Ham Demonstrations

Participants will follow the presentation order which will be listed below for Hog & Ham’s demonstration/illustrated talk competition on Friday, July 27, 2007. We will begin check-in at 9:00 a.m. and the talks will begin in Room 156 at 9:30 a.m. We will take a break ~noon for lunch on your own and then resume the rest of the talks. The awards will follow the competition as soon as results can be confirmed. On average, a new talk begins every 10 minutes. Plan to arrive ahead of schedule in case we move along more quickly than expected.

Demonstrations should follow the format for those given at district and state events, 3-12 minutes for intermediates and 5-12 minutes for seniors. Intermediates are 13 and under as of September 1, 2006, and seniors are 14 and over on that date. A table and easel will be provided and an overhead projector, chalkboard, and computer projection equipment (call ahead to arrange) will be available. Anything else needed must be brought by the participant.

At the completion of the event, contestants will be able to take home their bacon, link sausage, and hams that were left behind for curing. They should bring a 96 quart cooler (or it’s equivalent in smaller coolers) to carry the meat home. If the coolers are left in the walk-in cooler we used during the program, marked with the pig #, the staff will pack them with the smoke products so they are ready to go when it’s time to leave. Be sure to enter the cooler from the Meats Lab side and not the classroom - there will be classes in session earlier that morning.
